A Healthy Pancake Week: Not Trivial Recipes For Maslenitsa

The favorite holiday of many people Maslenitsa is approaching. This year Maslenitsa falls on International Women's Day (the 8th of March). It will be held from March 8 to March 14 so it is possible not to think about a special holiday breakfast for your dearest women. It definitely should be Russian pancakes! For two whole weeks, Christians will stuff their bellies with pancakes before the Great Lent. In this article, we suggest making healthy pancakes with a not less healthy topping so that you can overeat them with a clear conscience.

To make pancakes, we will use a cheap and healthy product as green buckwheat. It has a lower glycemic index, is good for the respiratory system, and also rebuilds muscle tissue after exercising faster than other grains.

Ingredients

  • green buckwheat 1 cup
  • 3/4 cup of water
  • 1 egg
  • vegetable oil 1 tablespoon
  • baking powder 1 teaspoon

Before you start cooking, green buckwheat must be poured with cold water and left overnight. Rinse it in the morning, chop in a blender and mix with the rest of the ingredients. After that, you can fry the pancakes on a well-heated pan. They will not stick and will surprise you with great taste.

For the filling, we suggest making chia jam from berries and chia seeds. Now everyone knows about the benefits of these mysterious seeds. They normalize digestive processes, improve brain function, and have a positive effect on the heart.

Ingredients

  • any berries (for example, raspberries) 200 gr
  • ghia seeds 3 tablespoons
  • any sweetener of your taste
  • 2 tablespoons of water
  • lemon juice 1 tablespoon

Chop the berries to a puree, add sweetener and lemon juice, stir in the chia seeds, cover the bowl or plate with cling film and leave for 1-2 hours to let the seeds swell. After that, be sure to stir the mixture. The resulting jam can be stored in the refrigerator for about a week.
